THE COFFEE STORY
We sourced this coffee from a collective of smallholder coffee farmers from San Agustín, a famous region within the Andean mountains. The high altitude and rich volcanic soil provides the perfect conditions for growing high quality and flavoursome speciality coffee.
The majority of growers here produce coffee cherries on less than 3 hectares of land, and the plants are often tended to by family only. This allows for a more intensive and careful farming practice, as each family has a serious love for producing a great cup of coffee.
These beans are processed using supercritical CO2 (sounds cool right?) which doesn't involve the use of any harsh chemicals and is a closed loop system. This not only ensures a clean cup with maximum taste, but also reduces the environmental impact!

SCA CUP SCORE = 83 POINTS
An SCA (Speciality Coffee Association) cup score is essentially a score of coffee bean quality. Anything above 80 points would be considered a ‘speciality’ coffee. We choose to only source speciality grade coffee, which means that we can guarantee not only an amazing tasting coffee, but also that the coffee was farmed in the most ethical way.
DECAF PROCESS = CO2
The carbon dioxide ‘CO2’ method is a chemical free and eco friendly process of decaffeinating green coffee beans. Green beans are soaked in water before being put in a pressurised chamber and exposed to CO2. The CO2 draws the caffeine out of the beans which is then recycled and reused.
ALTITUDE = 1700-1900 MASL
We measure the altitude that coffee is grown at in ‘MASL’ (metres above sea level). The height that coffee is grown at can have a big impact on the taste of the coffee when roasted. Essentially, coffee beans grown at higher altitudes tend to be of higher quality and give us more unique flavours when roasted.
COFFEE VARIETAL = CATURRA, COLOMBIA & CASTILLO
A coffee varietal is the name given to the type of coffee plant - similar to the grape variety used in wine. The different varietals of the coffee plant thrive in particular conditions, and can shape the flavour and body of the coffee when roasted. Sometimes coffee lots can be made up of only one variety, and other times there are a mixture of varieties used.
